Baltzersen’s are looking for a trainee baker to join our team at our bakery in at Kettlesing Head - 7 Miles outside Harrogate.
Bakeri Baltzersen bakes a range of long fermented sourdough loaves, rye, ciabatta and more traditional yeasted white and granary style loaves/rolls. We also bake pastry and viennoiserie from scratch.
As a trainee baker we'll teach you to understand the process of feeding a starter, bulking this up and then mixing and shaping loaves. You will be able to scale recipes up using bakers percentages and have an understanding of judging proof of sourdough and yeasted products.
You will learn to laminate pastry, then divide and and shape the different types of pastry from croissants, to pain au chocolat and cruffins.
We change our cruffin and savoury sourdough flavours weekly so there is ample opportunity to get involved with developing flavour combinations and working on different decorative finishes.
It is important that you have an eye for detail and are prepared to take responsibility for producing consistent products to a high standard.
We are just finishing up the refurbishment of an adjacent building which will allow us to split the bakery into separate bread and pastry rooms. We have lots of new equipment to bring into our production, a chilled pastry room to help maintain consistency of the bakes throughout the year and more comfortable facilities for the team.
You’ll have the opportunity to work with a growing team of talented bakers at a time when we are expanding our delivery areas and are looking to add new lines.

The most important qualities we're looking for are commitment to the position, hard work, a positive attitude and a genuine interest in bread/pastry.
We are open 7 days/week.
The way we operate the bakery means that we can offer some really great shift patterns in comparison to many bakeries. You'll work shifts that are mostly between 8am and 8pm with bake shifts extending up til around 10pm. We are conscious that daytime shifts are better for most people so we are looking to condense the later shifts as much as possible.
There is no access to the bakery site via public transport so applicants must have the ability to get to work by their own transport.
This position is a full-time post offering a minimum of 37.5 hours per week.
The starting pay for this position is £11.20/hr. This will rise to £12.79 per hour once you are trained in all areas of the bakery and is then reviewed annually.
Holidays are calculated on an hourly basis at Baltzersen’s and you accrue holiday for every hour you work.
