Head Pastry Baker
We are looking for someone to join our team at the bakery as Head Pastry Baker.
About Us
Bakeri Baltzersen was established in 2020 and is a wholesale and retail bakery based at Kettlesing Head - 7 Miles outside Harrogate.
In 2022 we finished the refurbishment of an adjacent building which has allowed us to split the bakery into separate bread and pastry rooms. We have lots of relatively new equipment and a really nice space in which to work.
You'll be joining a team of around 11 full-time bakers who are really great at what they do. We bake for around 120 wholesale partners plus our two shops and a cafe.
The Role
Pastry is a huge part of what we do at Bakeri Baltzersen comprising about 40% of our sales on a weekly basis. The team have done great work in establishing a reputation for very good consistent products covering the classics (croissant, PAC), Scandi/coffee shop staples such as cinnamon buns and skolebrød as well as more modern options such as cruffins.
We're looking for someone to come in with the ability to take things on to the next level both in terms of operating an efficient bakery and also product presentation and development.
The responsibilities will include:

Oversee the daily operations bakery, ensuring the production of exceptional pastry products.

Lead a team of bakers, providing guidance, training, and support to maintain high-quality standards.

Develop and refine recipes, techniques, and processes to ensure consistency and excellence in all baked goods.

Expertly hand shape, mould, and mix doughs, using your extensive knowledge and experience.

Maintain inventory levels, order supplies, and manage cost control to optimize bakery operations.

Ensure strict adherence to food safety and sanitation regulations, upholding the highest standards of cleanliness and hygiene.

Collaborate with the management team to innovate and introduce new products and flavours, staying ahead of market trends.

Shifts
The bakery is open 7 days/week we would be looking to agree a regular work pattern with 5 days on and two days off together where possible.
There is no access to the bakery site via public transport so you must have the ability to get to work by car (HG3 2SG or search google maps for 'Bakeri Baltzersen Production Unit').
Hours
You will work 8 hour shifts which will roughly 6am-2pm if you are on laminating/shaping, 2pm to 10pm if you are baking or will fall in between these times if you are doing development or training work.
Pay
The pay for this position is £15.50/hr.
Holidays
Holidays are calculated on an hourly basis at Baltzersen’s and you accrue holiday for every hour you work.
